Bye-bye, boring oatmeal–this is like enjoying dessert in your morning bowl. With tender apple, crunchy walnuts and plenty of cinnamon, it’s decadent, but also loaded with good nutrition. Rolled oats, also known as old fashioned oats, have iron, B vitamins and soluble fiber–plus, though they take a few minutes longer than quick-cooking (only a few, we promise), they offer a heartier, chewier texture that’s worth the wait.

Ingredients

1 teaspoon unsalted butter

½ small green apple, cored, chopped (about ¾ cup)

1 teaspoon maple syrup

¾ teaspoon cinnamon

⅛ teaspoon plus a pinch fine sea salt

1 cup milk of choice (I used unsweetened almond milk)

½ cup rolled oats (do not use quick cooking or instant)

2 teaspoons granulated sweetener (such as Swerve or Lakanto)

½ teaspoon vanilla extract

1 teaspoon hemp hearts

1 ½ tablespoons finely chopped toasted walnuts

Directions

Melt the butter in a small nonstick skillet over medium heat. Add the apple, maple syrup, ¼ teaspoon cinnamon and a pinch of salt. Cook, stirring occasionally, until the apple is tender, 2 to 4 minutes. Remove from the heat.
Meanwhile, in a small saucepan, combine the milk, ½ teaspoon cinnamon and ⅛ teaspoon salt. Bring to a boil over medium-high heat. Reduce the heat to medium, stir in the oats and sweetener and cook, stirring occasionally, until the oats are tender and the liquid has absorbed, about 5 minutes. Remove from the heat, stir in the vanilla and transfer to a bowl.
Top the oatmeal with the apple mixture; sprinkle with the hemp hearts and walnuts. Add another sprinkle of cinnamon, if you like. Serve hot.

Tips

You can change this up to suit your taste. Try apple pie spice instead of cinnamon, pear instead of apple, or pecans instead of walnuts.
